I’m always looking for new ways to eat veggies! I’m a salad girl, through and through. But, even though I love salads – they get OLD after a while! Even when you mix things up with recipes like my recently-posted 21 Day Fix-Approved Greek Inspired Salad, sometimes you just want something a little bit different!

That’s why I love this recipe so much!

It was one of those things where you stumble on multiple things and then go – “Hmmmm I wonder if this would work together?!” and then you try it and you find yourself shouting “Holy shit! This is great!” and sharing it with everyone you know.

Ya – that happened!

I saw a guy on YouTube meal prep cauliflower rice and then shortly after saw a recipe for cilantro lime chicken and rice on pinterest. And thought –


Well – spoiler alert! IT IS! And the best part – it’s easy peasy to make!

All you need is:

  • 2 heads of cauliflower
  • 1 bundle of cilantro
  • 1 lime

To prepare:

  • Take the heads of cauliflower, pulse in your food processor until they have a rice like consistency – not couscous, a little bigger.
  • Sautee with a tiny bit of oil and some garlic until cooked to your desire.
    • I like my veggies a little more on the raw side – not so mooshy! So I sauteed for 5 mins ish.
  • Chop up and toss in some cilantro and squeeze in some lime.
    • I used essentially a whole bunch of cilantro and a whole lime for 2 heads of cauliflower worth of rice! 😀

What to serve it with…

Really, you can serve this anyway you would white rice! But, my two favorite options are shown below!


I don’t often eat beef, but when I do it’s usually ground beef in some sort of mexican dish which can get really fatty really quick with the fat from the meat, cheese, avocado, etc. What I liked about this mix is that the cauliflower rice is so clean that you can have a little bit fattier of a meat and not feel so guilty! Plus, I think that the little bit of fat from the beef adds a nice richness to the dish. Top with a little bit of cheese and it’s the perfect veggie heavy, but light and delicious dinner!

21 Day Fix Breakdown: 1-2 Greens, 1 Red, 1/2 Blue

Another alternative? Serving the rice as a side with a stuffed pepper!

This is a new go-to lunch for me! I love making stuffed peppers, and these were simple and easy to make.

Saute your ground beef until no longer pink, fill half a pepper with 1 21 day fix red container of the beef, and bake for 30 mins and 350 degrees.

Then I can use my awesome lunch containers that I got on Amazon, fill one side with cilantro lime rice, and put my stuffed-pepper on the other side! I even catch myself occasionally just chopping up the pepper with my fork and mixing everything together! Equally as delicious as eating them both separately! Just sayin’…
